Game Night Edition: Tequila and Mitmita chicken wings

A game night without chicken wings is certainly not a game party as far as I’m concerned. Chicken wings are to sports events what turkey is to Thanksgiving i.e essential. And once you taste these grilled chicken wings, it’s going to become your favorite spicy grilled wings recipe.

Mitmita is a powdered spice blend from Ethiopia. This orange reddish powder contains various spices such as ground African bird’s eyes chili peppers, cardamon seeds and cloves. I have to thank a colleague of mine who had the kindness to introduce me to this spice by offering me a generous bag of Mitmita. It’s a great blend to season meat like chicken especially when you choose to grilled it.

As you have guessed it, this recipe is a fusion between Mexico and Ethiopian flavours. Why did I choose to do this mix? I don’t know. I personally think that cooking always means trying new things and experimenting new combinations. To my own pleasure, I was surprised to find out that Mitmita and Tequila go well together. Tequila brought some zing while Mitmita blend add some kick.

Prep: 30 min ( without the marinating time)     Cook: 20-25 min

INGREDIENTS

1 kg of Chicken wings

½ cup of Tequila ( El Jimador Tequila brand)

Juice of 2 limes

1 tablespoon of Lime Zest

2 teaspoons of Mitmita (an Ethiopian Spice blend powder)

Salt

Pepper

DIRECTIONS

1- In a mixing bowl, season chicken wings with salt and pepper. Pour tequila and lime juice over the wings then add Mitmita powder. Toss with tongs in order to coat each wing with the marinade. Wrap the bowl with film and let the wings marinated in the fridge for 1-2 hours.

2- Over medium heat, place the wings on a cast-iron griddle. And grill them for 20-25 minutes or until the internal temperature of the wings on a thermometer reaches at least 165°C and the skin is crispy. Remove it from the heat.

3- Serve hot with barbecue sauce and quarters of lime.
